Double Chocolate Chip Cookies

Today I will share my favorite cookie recipe. But before I go any further, take out 1/4 cup of butter (to let soften as you read). These cookies are very chocolatey and delicious! I love making them in small sizes so they are perfect with tea and coffee. I got this recipe from a great cook(ie)book, called Big Fat Cookies, by Elinor Klivans.

Ingredients

1 1/3 cup bittersweet chocolate chips

1/2 cup all-purpose flour

2 tbsp all cocoa powder

1/2 tsp baking soda

1/4 tsp salt

1/4 cup softened butter

1/4 cup brown sugar

2 tbsp granulated sugar

1 small egg

1/2 tsp vanilla extract

Preheat oven to 325℉ and line a baking sheet with parchment paper. Lightly grease.

Put 1/3 cup cup of the chocolate chips and melt in microwave at 20-second interval until melted and smooth. Set aside.

Mix the flour, cocoa, baking soda, and salt together and set aside.

Using a whisk, mix together the butter and sugars together until smooth. Add in the melted chocolate chips and mix. Add egg and vanilla and mix. Add flour mixture and stir in the remaining 1 cup chocolate chips.

Using an ice cream scoop with a 1-2 tbsp capacity or a spoon, scoop out the cookie dough evenly on the baking sheet. Space the cookies about 2 inches apart. Bake the cookies about 8-13 minutes, or until a toothpick come out clean (make sure you don’t poke into a chocolate chip). Let cool and enjoy!
