Today I will share how to make blueberry pop-tarts with lemon icing. I’ve never had real pop-tarts before, but I know the concept: a thin pastry filled with jam. These pop-tarts are really good, and not super sweet. For these, I didn’t use any recipes, I just made it up and they turned out great! If you want, you can also use pre-made jam as well. If you do, skip step two.

Ingredients
1 cup washed, chopped strawberries
3 cups frozen blueberries
1 tbsp lemon juice
2 tbsp sugar, or to taste
1/2 tsp corn starch
1 egg
1 1/2 tbsp milk
2 sheets thawed puff pastry
2/3 cup powdered sugar
2-3 tsp lemon juice

step one: Preheat oven to 350℉. Line a baking sheet with parchment paper and lightly grease.
step two: In a small pot, combine the strawberries, blueberries, lemon juice, and sugar. Cook on medium-low until juices come out and the fruit is soft. Add in the corn starch and let cook until thicker, and the juices get soaked up.
step three: Mix together egg and milk.
step four: Lay out puff pastry on a cutting board and cut 12 rectangles about 4×3 inches big. Add 1-2 tbsp of the jam on every other rectangle and leave a 1 1/2 cm boarder. Brush boarder with egg wash and place a plain puff pastry sheet on top. Using a fork, crimp the boarder to get small lines all around, see photo above. place pop-tarts on baking sheet and place in oven. Bake a 350 for 10-15 minutes or until golden brown. Flip and bake for a few more minutes. Take out of oven and let cool.
step five: Mix together the powdered sugar and lemon juice until smooth. Drizzle over cooled pop-tarts. Let sit until icing has dried down and enjoy!
