Strawberry Cheesecake Bites

My recipe for Strawberry Cheesecake Bites are great for a simple, sweet snack, or, healthy dessert! It only takes about 5 minutes to make, and no heat is required. This is an easy thing to make for events and parties. Enjoy!

Ingredients:

about five fresh strawberries

1-2 sheets of graham crackers or 1/4 cup cheerios

For the Frosting:

1 1/2 tbsp softened cream cheese

1 tbsp softened butter

about 1 tbsp powdered sugar, modified to your liking

a dash of vanilla

  1. Scoop out the core and the green part of the strawberries so you have a strawberry bucket. Put to the side.
  2. In a small bowl, using a fork, mix together the ingredients for the frosting. Make sure to mash out all lumps. Put to the side.
  3. Crush the graham crackers into dust*.
  4. Fill the strawberry buckets with some frosting.
  5. Roll the frosting part (the top of the strawberry buckets) into the crushed graham crackers and repeat with the rest of the strawberries. Enjoy! (see how I plated them above.)

*I suggest using a mortar and pestle for crushing them, but you can also put it in a ziplock bag and crush it with a cup or rolling pin. Or you could break it up by hand. Up to you.
